Description

Old gold to light amber, silky matt opacity. Citrus, orange blossom, wet table chalk, light black tea, crunchy apple, peach stone, light tobacco, pome fruit peel. Tart, astringent tannin, no superficial fruit, fresh acidity, major tonality taste likes.

Round and elegant development, high colour due to mash fermentation, matures for 6 months in large concrete tanks. Pair with Pea and mint soup, sea bass with artichoke a la Barigoule, whole guinea fowl with chilli and sage from the oven.
